5 eggs
3 tablespoons of milk
salt and black pepper to taste
2 tablespoons of butter or margarine
4 small tomatoes, seeded and diced
2 small onions, finely chopped
1 tablespoon of lemon juice
250g of cooked sausage, crumbled
4 tablespoons of vinegar
2 tablespoons of olive oil
2 tablespoons of chopped fresh parsley

Beat the eggs with milk, salt, and pepper
Melt the butter or margarine in a skillet over medium heat
Add the eggs and cook for 5 minutes or until they're cooked through
Remove from heat
Combine the tomatoes and onions
Dress with lemon juice
Pulse the scrambled eggs and add to the bowl
Add the sausage
Mix the vinegar, olive oil, and parsley, and drizzle over the salad
If desired, garnish with sausage slices and parsley leaves
Serves 4-6 people.
