2 cans of asparagus tips
1 bunch of curly lettuce
Seasoning
1/2 cup mandarin oranges, peeled
3/4 cup olive oil
juice of 1 lemon
ground black pepper
1 cooked potato, mashed
1 tablespoon white wine vinegar
1 teaspoon salt
1 minced garlic clove
1/2 cup or more white wine
2 cans of asparagus tips
1 bunch of curly lettuce
Seasoning

In a bowl, arrange the asparagus tips over the lettuce leaves
If desired, garnish with red bell pepper slices
To make the seasoning, place the mandarin oranges and half of the olive oil in a blender
Blend until the oranges are well chopped
Add the remaining olive oil, lemon juice, ground black pepper to taste, mashed potato, white wine vinegar, salt, and garlic
Blend until smooth
Add the white wine gradually, stirring until the desired consistency is reached
Serve 6-8 servings.
