1 large eggplant, washed and seeded, but not peeled

Cut the eggplant into small cubes, without peeling
Place on a rack
Sprinkle with salt and let it drain for 30 minutes
Dry and fry in olive oil or vegetable oil until golden brown and tender
Remove from heat and combine remaining ingredients
Chill in refrigerator
Serves 4 people.
