1 cup cooked soybeans (see basic recipe)
2 cups zucchini, cut into cubes

Cook the soybeans according to the basic recipe and drain well
Cook the zucchinis in a little water without letting them get too soft
Mix together cooked soybeans, zucchinis, scallion, and cumin
Mix garlic, salt, mustard, vinegar, and olive oil
Pour the seasoning over the soybean mixture, mix well, and refrigerate for several hours or overnight, stirring occasionally
Serve 6-8 servings.
