Fry the bacon and onion over low heat until golden brown
Add the sausage and cook for 3 minutes, stirring occasionally
Combine with beef broth, parsley, thyme, garlic, black pepper, paprika, salt, and potatoes
Bring to a boil, then reduce the heat and simmer for 10 minutes
Add the small pasta and continue cooking for an additional 6 minutes, or until al dente
Stir in the spinach leaves and cook until wilted
Check the seasoning and adjust as needed
Serve hot, topped with grated Parmesan cheese and toasted breadcrumbs if desired
