Dressing:
1/2 cup of olive oil or vegetable oil
1/4 cup of vinegar
2 tablespoons of mustard
2 tablespoons of chopped fresh parsley

Cook the soybeans and drain (use the broth to prepare a soup)
Grate the carrot and cook it in boiling water for about 5 minutes, or until tender but still slightly crisp
Do the same with the sweet herb
Chop the carrot and sweet herb into small pieces and combine with the soybeans
Mix all dressing ingredients and season the soybeans and vegetables
Serve warm.
