Prepare the pesto (see below for instructions)
Cut the tomatoes into slices and the mozzarella as well
Arrange a tomato slice in a salad bowl
Cover with a mozzarella slice and top with a thin layer of pesto
Serve with olive oil, salt, and pepper on the side
