1/2 cup of chopped fresh parsley

In a large pot of boiling water, cook the potatoes until they're almost tender (don't overcook them)
Remove the potatoes from the water and let them cool
Then combine all the ingredients except for salt
Mix well, taste, season with salt to taste, and refrigerate
Set aside some capers to garnish the salad.
