1 sprig of parsley
1 bay leaf
1/2 cup dry white wine (120 ml)
500g of oysters, shucked
1 tablespoon salt
1 pinch of black pepper
1/4 cup chopped lettuce
To make the mayonnaise:
1 egg
3/4 cup olive oil (180 ml)
1/4 cup chopped parsley
1/2 cup chopped spinach
1/4 cup chopped green onion
1/2 teaspoon salt or to taste

In a medium saucepan, bring the parsley, bay leaf, and white wine to a simmer over medium heat
When it starts to boil, add the oysters, reduce the heat, and cook until they're tender (about 5 minutes)
Remove the bay leaf and parsley, strain the liquid, season with salt and pepper, and let cool
Line the bottom of a serving dish with the chopped lettuce
Distribute the oysters on top. Reserve
To make the mayonnaise: Place the egg in a blender
With the blender running, slowly add the olive oil, allowing it to drizzle in
Beat until thickened
Turn off the blender, add the remaining ingredients, and mix gently with a spoon or spatula
Distribute the mayonnaise over the oysters and refrigerate until serving time
