3 1/2 tablespoons of olive oil
2 tablespoons of fresh grated ginger
1 tablespoon of pressed garlic
1/2 pound of boneless chicken breast, cut into 2 cm pieces
salt and black pepper to taste
1/3 cup of chicken broth or water
1/4 cup of chopped fresh parsley
1/4 cup of mayonnaise
1/4 cup of natural yogurt
1 tablespoon of lemon juice
1 teaspoon of grated lemon zest
2 bananas, cut into slices
1/3 cup of chopped green onion

Heat the olive oil in a large skillet and add 1 tablespoon of ginger, 1/2 tablespoon of garlic, and quickly heat it up
Add the chicken pieces and stir until cooked (about 4 minutes)
Strain the broth into a bowl to collect the liquid
Season the chicken with salt and black pepper and set aside
Combine the broth, 1 tablespoon of parsley, and the liquid in the skillet
Simmer for a few minutes, scraping the bottom
Cool and place in a bowl
Let it cool slightly
Add the mayonnaise, yogurt, lemon juice, grated lemon zest, ginger, garlic, and remaining parsley
Season to taste
Mix well with the fried chicken, sliced bananas, and chopped green onion
Cover and refrigerate for 1 hour
Serve garnished with parsley
