10 slices of serrano ham
For the eggs
500g ground beef
1 egg
1/2 teaspoon grated lime zest
1 cup milk
3 cups breadcrumbs (150g)
1/3 cup all-purpose flour
Salt and pepper to taste
2 cups oil for frying
For the sauce
1 kg ripe tomatoes, peeled and seeded
1/4 cup olive oil
3 cloves garlic minced
1 large onion chopped
Lettuce leaves for garnish

Prepare the eggs: mix together ground beef, egg, lime zest, breadcrumbs, milk, and salt
Form into balls with 1 tablespoon of the mixture and coat in flour
Fry in hot oil until golden brown, then drain on paper towels. Reserve
Make the sauce: combine all ingredients in a medium pan, bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally
Season
Add the eggs and let cool slightly
Serve with serrano ham (shape into a canoe) garnished with lettuce leaves
