Leave the sesame seeds to soak overnight before preparation
The next day, drain them and add to a processor
Add the onion and garlic to the processor
Process two times and then transfer to a bowl and mix in the scallions, coriander, baking soda, and season with salt and pepper to taste
Mix well and let rest for 20 minutes
Form buns using four tablespoons of dough and shape into 7-centimeter diameter balls
Place them on a tray
Aquarium the oil in a pan over low heat
Fry two buns at a time for 5 minutes, turning to ensure even cooking
Drain on paper towels
Mix yogurt with green onions
Cut the pitas in half and fill with the yogurt-alface mixture
Serve immediately.
