2 bell peppers, cut into 4 pieces each
1/4 cup of mayonnaise
1 well-chopped garlic clove
2 medium eggplants, sliced thinly and grilled
2 red and yellow bell peppers, sliced and grilled
2 thin onion rings, grilled
500g of mozzarella cheese

Grill each bell pepper slice in half lengthwise with the stem side down
Spread mayonnaise over each slice
Stuff with slices of eggplant, red and yellow bell peppers, onion rings, and mozzarella cheese cut into thin strips
Place in a hot oven preheated to 180°C for 10 minutes
Serve warm.
