Cheese Sauce:
2 soup spoons of butter
2 soup spoons of wheat flour
1 1/2 cups of warm milk
1/2 cup of grated Parmesan cheese
1/2 cup of grated Cheddar cheese
1/2 tea spoon of lemon zest
white pepper
Melt the butter over low heat in a large frying pan, enough to fit the 4 slices of ham
Preheat the oven to moderate temperature (170°C)
When the butter in the frying pan starts bubbling, add the slices of ham and fry over medium heat until they're done on both sides
Place the slices in a shallow baking dish
Fry the prosciutto slices on both sides in the same frying pan, adding a little butter
Place them on top of the ham slices
Prepare the sauce: melt the butter over low heat in a medium-sized saucepan
Add the flour and stir well
Remove from heat and let it cool for 1 minute
Put the saucepan back over low heat and add the warm milk, stirring well to prevent lumps
Increase the heat and cook, stirring constantly, for about 2 minutes until thickened
Add the grated cheese, lemon zest, and white pepper
Return to heat and stir until the cheese melts
Place the sauce over the ham slices in the baking dish and bake in a preheated oven at 170°C for 10 minutes
Remove from the oven, place on individual plates, and garnish with parsley if desired
