1 can of anchovy fillets (80 g)

8 cleaned sardines
flour for dusting
2 slightly beaten eggs
oil for frying

Crumble the anchovy fillets with a fork
Add the mustard, parsley, and mix well
Spread a little of this mixture on each sardine
Dust with flour, then egg, and finally flour again
Fry in hot oil and drain on absorbent paper
Serves 4 to 6 people.
