Clean the sardines and cut them into strips
Cut each strip into three or four pieces
Wash and dry the thyme
Remove the stems from the thyme or parsley, but leave the leaves intact
Layer the sardine pieces, onion, thyme, parsley, black pepper, and white pepper in a jar
Add the wine vinegar and sugar
CLOSE the jar tightly
Store in the refrigerator for several days
Serve as an appetizer or part of a cold buffet
