12 cloves
1 medium onion, peeled
3/4 cup of olive oil
1 sprig of rosemary
1/2 cup of rice
2 cups of water
1 teaspoon of ground black pepper
24 sardine fillets (700g)
1/2 teaspoon of fresh or dried thyme
1/2 teaspoon of fresh or dried marjoram
2 tablespoons of chopped parsley
6 slices of stale bread, crushed
1/2 cup of all-purpose flour
2 eggs
Salt to taste

Salt to taste
Thread the cloves into the onion and fry in a pan with 2 tablespoons of olive oil and rosemary
Add the rice, let it brown, reduce heat, add water and a pinch of salt
Cover the pan and cook until all the liquid is absorbed
Remove the onion
Season the rice with ground black pepper, thyme, marjoram, and 2 tablespoons of parsley
Mix well
Using your hands, shape 12 patties with the rice mixture and chill them
Dredge the sardine fillets in flour (both sides)
Place one on top of another and fill with the rice patty, like a sandwich
Coat in beaten egg and crushed bread, seasoned with remaining parsley
Fry in batches in the remaining olive oil
Drain on paper towels
Season with salt to taste, serve immediately
