1/2 cup of chopped parsley
1/3 cup of olive oil
1/4 cup of vinegar
1/2 teaspoon of crushed thyme
700 g of cleaned and gutted sardine, filleted without spine
1 carrot, peeled and grated
2 green onions, peeled and grated
1 zucchini, peeled and grated
Salt and black pepper to taste

Season the sardines with salt and pepper and brush with olive oil to taste
Heat a grill, brush with olive oil and cook the sardines on both sides until golden brown
In a pan, heat the olive oil over medium heat
Add the remaining ingredients and cook, stirring occasionally, until they are tender but still crisp
Arrange in a dish and top with the sardines
Serve immediately.
