100g of grated mozzarella
6 tablespoons of requeijão
Fresh thyme, chopped

Cook the sweet potatoes with salt until they're al dente
Let them cool and cut them into three parts horizontally
Preheat the oven to 400°F (200°C)

In a bowl, mix together the mozzarella, requeijão, thyme, and black pepper well
Stuff each sweet potato part with the mixture, then shape it back up
Wrap each sweet potato with a slice of bacon and secure with a toothpick
Place them in a lightly greased refrigerator and bake until golden.
