250g bucatini pasta
Tomato sauce
1/2 cup grated Parmesan cheese (50g)
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon red pepper flakes
50g bacon cubes
8 small, ripe tomatoes, peeled and seeded, diced
1 medium onion, diced
1 pinch of black pepper
250g bucatini pasta

Cook pasta
Bring 3 liters of water to a boil in a large pot
Add 1 tablespoon of salt when boiling
Add the bucatini pasta to the boiling water and cook until al dente
Make tomato sauce
In medium heat, fry the bacon in olive oil until crispy
Remove with a slotted spoon and set aside on paper towels
Add the onion to the remaining fat in the pot and cook until softened, stirring occasionally
Add the tomatoes, red pepper flakes, salt, and black pepper to the pot
Cook, stirring occasionally, until the tomatoes break down
Increase heat, add the bacon, and fry for about 30 seconds
Remove from heat and set aside
Drain the pasta, transfer it to a bowl, and immediately add the reserved tomato sauce and Parmesan cheese
Gently mix and serve.
