Chop the parsley and soak it in water
Drain well and combine with ground beef
Season with salt and shape into almond-shaped patties
Fry them in hot oil and reserve
Blend mango pulp in a blender until smooth and set aside
Saute onion and garlic in a tablespoon of olive oil
Add the blended mango pulp and tomato sauce, seasoning with salt
Let it simmer for five minutes and add the almond-shaped patties
Simmer for another minute and sprinkle with chives
Serve with rice and green salad.
