2 cups of skim milk
3 tablespoons of rice
3 tablespoons of orange liqueur
1/2 tablespoon of grated orange peel
1 tablespoon of unsweetened gelatin
1 can of strawberries, blueberries, kiwi, or pineapple

Bring the milk to a boil in a saucepan with an anti-adhesive coating
Add the rice, liqueur, and grated orange peel
Cook over low heat until the rice is tender
Drain the fruit from the can
Use the fruit juice to soften the gelatin
Add the softened gelatin to the rice and stir over low heat until the gelatin dissolves completely
Remove from heat, add the fruit and optional sweetener if desired
Pour into a mold and refrigerate for several hours
Serve 6 portions with 96 calories each
Note: If desired, substitute canned fruits with fresh fruits and dissolve the gelatin in water.
