Mix the gelatin with 1 1/2 cups of water, the milk, the sugar, the salt, and the coffee, and let it sit in a warm water bath
Heat until almost boiling and the gelatin has dissolved
Add lightly beaten eggs and cook until the mixture thickens on the spoon
Remove from heat and add vanilla extract
Chill in the refrigerator until slightly firmer
Beat egg whites until stiff and fold into the coffee mixture
Pour into six ramekins or a larger bowl and chill in the refrigerator until firm
Garnish with chocolate shavings if desired, and serve.
