Bring the water to a boil in a saucepan, with salt and butter or margarine
When boiling, pour in the flour at once and stir quickly until it forms a ball, completely detached from the bottom and sides of the pan
Remove from heat and let cool slightly
Add the eggs one by one, beating well each time
Add the cheese and beat again
Form balls the size of an almond, and drop them into hot oil that has not yet reached its smoking point, so they can grow
Test the temperature with a piece of bread that should form a crispy crust when immersed in oil
When the balls have tripled in volume, increase the heat to golden brown
They should be completely covered in oil, and therefore fry only a few at a time, and in a large pan
Calculate around 8 minutes per side before flipping, then serve hot.
