2 packets of fresh yeast (30g)
2 tablespoons of sugar
1 tablespoon of vanilla extract
1/2 cup of warm milk
Lime zest from 1 lime
1 and 1/4 cups of unsalted butter, softened
1 egg, lightly beaten
1 cup of guava jam
500g of all-purpose flour, approximately
Confectioner's sugar for dusting

In a bowl, combine the yeast, sugar, and vanilla extract and let it rest for 20 minutes
Add the milk, lime zest, and butter
Mix with a wooden spoon and add the egg
Gradually add the flour while mixing until a smooth dough forms
Add a little more flour if needed
On a floured surface, knead the dough for five minutes and let it rest for 30 minutes covered by a cloth
Divide the dough into 40 pieces and place a bit of guava jam on each one
Close the meringues and arrange them in an ungreased baking dish
Bake in a medium oven preheated for 20 minutes
Remove from the oven and dust the meringues while still warm with confectioner's sugar.
