3 pitted dates, chopped, and seedless
3/4 cup honey
1/3 cup butter, softened
2 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1 1/2 teaspoons baking soda
1/2 cup water
1 egg, beaten

Grease a ring mold with a 20 cm diameter
In a saucepan, cook the dates with honey over low heat until they're soft and moist
Add butter and let it cool down
Sift flour with spices and baking soda
Add to the dates mixture, with water and egg
Mix well
Pour the batter into the ring mold, wrap with aluminum foil, and tie with string
Place the mold on a metal rack inside a 7-liter pressure cooker with 3 cups of cold water
Close the cooker
When the valve starts to release steam, cook for 30 minutes
Let it cool down for 5 minutes and then finish cooling under running cold water
Open the cooker
Remove the cake from the mold and remove the foil with string
Wait for 5 minutes
Then, plunge the cake into cold water
Release the sides of the cake with a knife and turn out
Serve warm.
