Prepare the basic doughnut dough, adding sugar along with the flour
Fold in the vanilla after adding the eggs
Heat 5 cm of vegetable oil in a deep fryer or a large saucepan to around 180°C
Drip spoonfuls of the dough into the hot oil, making sure not to overcrowd the pot
Because the doughnuts will grow significantly, only fry a few at a time
Fry for about 5 minutes on each side, until golden brown and cooked through
Use a slotted spoon to remove the doughnuts from the oil and place them on paper towels to drain
Dust with confectioner's sugar and orange zest, if desired
Serving temperature: Warm or at room temperature
Serves: About 4-6 doughnuts per serving
Variations: Use a pastry bag to pipe out the dough and create fun shapes, such as fruit or chocolate
