Preheat the oven to medium (180°C)
Grease and dust a baking dish 35 cm x 23 cm with butter and wheat flour
Make the dough: in a stand mixer, beat the egg whites until stiff
Add the granulated sugar and continue beating, adding the egg yolks one at a time without stopping the machine
Sift over the bowl of the stand mixer the wheat flour, yeast, and salt
Mix slowly
Pour the dough into the baking dish and bake until golden or when inserting a toothpick in the center of the cake, it comes out clean
Let cool slightly
Unmold onto a floured cloth and roll
Make the filling: heat water and guava jam in a saucepan over low heat to melt
Mix well
Unroll the strawberry roll, spread the filling on top, and re-roll.
