In a large pot, combine the vegetable broth and sliced sweet potatoes
Bring to a boil, then reduce heat and simmer for 20 minutes after boiling starts
Remove from heat, add heavy cream, salt, and blend in a blender until smooth
Return to pot and warm the soup over low heat
Sprinkle with chopped fresh herbs and serve with croutons
Consume this soup on the same day of preparation.
