Cook the cauliflower in salted water, covered, with just enough liquid to cover, for 10-15 minutes
Drain and chop into large pieces
In a large pan, sauté the onion in butter until it's slightly softened but not browned
Add the flour and stir well
Add the chicken broth, milk, and Worcestershire sauce and cook, stirring constantly, until the mixture thickens slightly
Add the cauliflower, let it simmer for a bit, then add the cheese and stir well
To serve, sprinkle each serving with green scallions and enjoy 6-8 servings
