3 cups of chopped sunchoke leaves

In a pot, combine the sunchoke, potato, onion, garlic, and chicken broth
Bring to a boil, then reduce heat, cover, and simmer for 30 minutes or until the sunchoke and potato are tender
Remove from heat and blend in a blender
Return the mixture to the pot and add heavy cream, salt, and black pepper
Simmer without boiling
If you prefer a thinner soup with less cream, simply add more milk
Serve hot.
