2 cups dried split peas
18 cups water
1 smoked ham hock or prosciutto rind or roasted turkey carcass
1/2 cup finely chopped onion
1 cup finely chopped celery (or a combination of the two)
2 tablespoons uncooked white rice

Let the peas soak in 6 cups water with the rice for at least one day
Place the ham hock or rind in a large pot, add 12 cups water, and simmer slowly for 3 hours
Add the onion, celery, and continue to cook for another hour
Strain through a fine-mesh sieve and remove any excess fat
Taste and adjust seasoning as needed
Serve with toasted bread croutons if desired
