1 tablespoon extra virgin olive oil
1 medium onion cut into rings
1 crushed garlic clove
1 medium potato peeled and cubed
400 ml boiling water
1 pinch of salt (do not overdo it)
10 chopped spinach leaves
1 sprig of parsley (leaves only)
2 tablespoons yogurt
1 tablespoon extra virgin olive oil
1 medium onion cut into rings

2 tablespoons yogurt
Heat the olive oil slightly in a pan over low heat and sauté the onion, garlic, and potato for 5 minutes
Add the remaining ingredients, excluding yogurt, let it simmer and cook for 20 minutes with the pan covered on low heat
Remove from heat, let it cool, and blend in a blender
Heat again and, when serving, add the yogurt.
