500g of peeled and thinly sliced sweet potatoes

4 cups of chicken broth
3 cups of water
Salt and black pepper to taste

Melt the butter in a large pot over medium heat and add the onion
Cook until translucent
Add the garlic scapes and cook for an additional 5 minutes, stirring occasionally
Add the sweet potatoes, stir well, and then add the chicken broth and water
Cook for about half an hour with the lid slightly ajar
Let it cool, then transfer to a blender
Blend until smooth
Return to the pot and adjust seasoning with salt and black pepper
Bring to a simmer and serve immediately.
