1 cup grated Gruyère cheese

In a large skillet, sauté the onions in butter over low heat
Cover and simmer, stirring occasionally with a wooden spoon, for 30 minutes or until the onions are almost falling apart
If necessary, add a little water and scrape the bottom of the pan
Add the flour and stir well
Combine the cheese, mix well, and gradually add the broth, stirring always
Let it simmer at high heat, stirring for 1 minute
Serve the soup, topping with a slice of French bread.
