Salt and black pepper to taste

Chopped parsley to taste

Bring the onion, carrot, and pearl barley to a boil together with the chicken broth
When it starts to simmer, cover the pot and reduce heat
Cook for 50 minutes or until the grain is tender
Season to taste
Add the mushrooms and cook for 7 minutes
Add the parsley
Serve in 10 portions.
