Heat the olive oil over high heat
Add the onion, carrots, cabbage, and zucchini, and cook until they're golden brown
Set aside
Reserve the vegetables
In the same pot, sear the beef cubes
Add the vegetables to the beef, along with the potatoes, tomatoes, and remaining ingredients
Bring to a boil
Reduce heat, cover, and simmer until the beef and vegetables are tender.
