1 chicken cut into pieces
Salt and black pepper to taste
1/4 cup of butter or margarine
2 large onions, cut into four
1/3 cup of all-purpose flour
2 cloves of garlic, minced
3 tomatoes, cored and cut into four
1 red bell pepper, diced
1 green bell pepper, diced
2 cups of fresh mushrooms, cored and sliced
1 teaspoon of chopped parsley
1/4 teaspoon of thyme
1 sprig of rosemary
1 1/2 cups of chicken broth
1 chicken cut into pieces

Sprinkle the chicken pieces with salt and black pepper
Melt the butter or margarine in a large skillet, then brown the chicken pieces
Add the onions and cook for 2 minutes
Add the flour and stir well
Add the garlic, tomatoes, bell peppers, mushrooms, parsley, thyme, and rosemary
Stir to combine
Add the chicken broth, salt, and black pepper to taste
Cover the skillet and simmer for 20 minutes or until the chicken is cooked through
If needed, add more chicken broth
Serve hot in four portions.
