In a 10-cup capacity bowl, combine the butter, flour, and onion, mixing well
Place in a microwave-safe container and cook on high for approximately 3 minutes or until the onion is tender, stirring every minute
Add the milk, salt, and nutmeg, whipping vigorously with a hand mixer
Cover with a proper lid or wrap with plastic film leaving a small opening
Cook in the microwave on high for approximately 8 minutes or until the mixture becomes slightly thickened, stirring every 2 minutes
Pour into a blender, reserving 1/2 cup of coconut (60g)
Blend until smooth and creamy
Return to the bowl, add the remaining coconut, and warm in the microwave on high for 1 minute
Distribute among four serving bowls and serve immediately
