1 kilogram of assorted fish
2 teaspoons of salt
4 cups of water
4 slices of smoked bacon (bacon)
1/2 cup of finely chopped onion
2 large cooked and diced potatoes
1/4 teaspoon of pepper
1 cup of milk with 1/8 teaspoon of baking soda
1 can of cold and unsour cream
1 kilogram of assorted fish

1 can of cold and unsour cream
Clean the fish, keeping the heads and cook them whole in 4 cups of water with salt
As soon as they're cooked, remove them, debone and clean the scales, then cut into large pieces
Fry the smoked bacon until crispy, then remove it to a paper towel-lined plate and chop into small pieces
Remove some of the fat, leaving only 1 tablespoon
Fry the onion until golden brown
Add the potatoes to the pan and mash slightly
Combine the cooking water from the fish with milk and baking soda
Let it simmer
Add the fish pieces and cold cream
Taste and adjust the seasonings to your liking
Bring to a boil, then serve hot, accompanied by toasted bread.
