1 3/4 kg of fish
4 finely chopped onions
3 cloves of garlic, well mashed
2 sprigs of thyme

2 ripe tomatoes, peeled, seedless, and diced

Cut the fish into pieces, place it in a pot, and crush well
Add the remaining ingredients except for the pepper and olive oil
Allow it to boil, then join the olive oil and let it simmer at high heat for 15 minutes
While the fish is cooking, cut some slices of bread, lightly brush with olive oil, and toast it in the oven
If desired, rub garlic on the bread
Place the toasted bread in a soup bowl and ladle the soup over it
Sprinkle with 1 tablespoon of chopped parsley
