1 fish of about 2 kg (cod, halibut, snook or other)
salt and black pepper to taste
1 large onion cut into pieces
2 cloves of garlic minced
2 tablespoons of olive oil
2 medium tomatoes cut into pieces
1 medium carrot peeled
8 cups of water
3 tablespoons of wheat flour

Clean the fish and remove 2 fillets
Cut them into cubes and season with salt and pepper to taste and reserve
Also reserve the head and central spine
In a pot heat the olive oil and sauté the onion and garlic until it starts to brown
Add the fish head and spine, along with the other ingredients except the fillet and wheat flour
Cover, let it simmer, reduce heat and cook for 45 minutes
Dredge the fish cubes in wheat flour
Skim off the foam, return the pot to the heat when the soup starts to boil again, add the fish cubes and cook for another 10 minutes
Serve hot.
