Combine the cucumber, mint, almonds, and a good pinch of salt in a small bowl and reserve for 20 minutes
Blend everything in a blender for 2 minutes (adding fresh heavy cream if you prefer a richer flavor), strain the mixture through a fine-mesh sieve and serve in chilled glass bowls.
