3 cups cooked and mashed avocado

Salt and black pepper to taste

Heat the onion, scallions, and 1 1/2 cups of chicken broth over low heat until the onion is tender
Transfer the mixture to a blender or food processor and add the avocado, milk, and remaining chicken broth
Blend well to achieve a smooth consistency
Season with salt and black pepper to taste
Chill in the refrigerator until cold, then serve
Optional: Garnish each bowl of soup with a tomato slice, a dollop of fresh whipped cream, and green scallion tops.
