Peel the cucumbers
Cut in half
Remove seeds and grate on coarse grater
In a large bowl, combine cucumber and beets, parsley and onion
Add the hot chicken broth
Check seasoning
Refrigerate
Serve chilled in soup bowls
If desired, garnish each bowl with 1 tablespoon of sour cream or plain yogurt and chopped parsley
