4 medium cucumbers
1 1/2 cups of yogurt
Salt and black pepper to taste

Thin slices of cucumber without seeds
Fresh cilantro leaves for garnish

Peel 3 cucumbers, remove the seeds, and cut into pieces
Blend together with the yogurt
Strain through a cheesecloth, pressing well to remove all liquid
Season to taste with salt and black pepper
Add the fourth cucumber, peeled without seeds, finely chopped
Combine with the cilantro
Cover and refrigerate for 2 hours or until chilled
Serve in cold bowls and garnish with slices of cucumber and leaves of cilantro
