Place the grated beets in a pot, add the beef broth and let the mixture simmer slowly for 20 minutes
Strain the soup to remove any remaining beets and add the tomato puree, salt, and pepper
Let it come to a boil
Add the orange juice pulp
Serve well chilled, garnished with sour cream and chopped scallions, and accompanied by 6 servings.
