In a bowl, combine the tomatoes and onion
Cover and let it rest for 1 hour, covered
Add the broth, wine, salt, ginger, parsley or thyme, and black pepper
Blend everything in a blender
Refrigerate, tightly sealed, until well chilled
If desired, garnish with parsley
