1/2 cup peeled and seeded cucumber, diced

2 cups natural yogurt

1 tablespoon lemon juice
1 cup water
1 tablespoon chopped fresh parsley

Place the cucumber in a bowl and sprinkle with salt
Let it sit for 15 minutes
Add half of the yogurt to the blender cup
Add the garlic, lemon juice, and cucumber
Blend quickly
Transfer to a bowl
Add the remaining yogurt and water
Check the seasoning and refrigerate for at least 4 hours or overnight
To serve, garnish each serving with a little chopped parsley
Serve 3 portions.
