In a pot, place the zucchini, onion, and broth
Cover and cook for 15 minutes
Drain and reserve the broth
Mash the zucchini and onion with a fork until they form a puree
Return the puree to the pot with the reserved broth, yogurt, heavy cream, lemon juice, and stir until smooth
Season with ginger, salt, and white pepper
Bring the pot to a simmer over medium heat
Turn off the heat and serve immediately, drizzled with a thread of olive oil.
